Beef & Green Chili Quesadillas
Ingredients
- 1 lb. lean ground beef
- 1 medium onion
- 1/4 tsp. salt
- 4 oz. can chopped green chilies, drained
- 3/4 cup of any of our delicious Spicy Salsas
- 2 cups shredded cheddar or CoJack cheese
- 10 to 12 medium flour tortillas
- Vegetable cooking spray
Instructions
Heat oven to 450 degrees
In a large skillet brown ground beef and onion over medium heat 8 to 10 minutes or until no longer pink, breaking up into 3/4 inch crumbles
Pour off drippings
Season beef with salt, add Salsa and chilies and stir in cheese
Spoon equal amounts of beef mixture (about 1/4 cup) on one half of each tortilla, fold to close
Arrange quesadillas on two baking sheets
Lightly spray tops of tortillas with cooking spray
Bake in 450 degree oven for 8 to 10 minutes or until lightly brown, switching baking sheets halfway through baking
